Over the years

The Philippine Food Technology Act (RA 11052, 2018) created a regulated food technology profession with a licensure exam, which dairy-processing graduates in the Philippines would take. The PRC page read on 3 Oct 2026 did not list food technologists among the professions using its online certificate service, so the exam's current status and programme were not confirmed.

  1. 700 mg
  2. 1,000 mg
  3. 1,300 mg

2. A coffee whitener labelled 'non-dairy' contains sodium caseinate. For a person with cow's milk protein allergy it is:

  1. Unsafe, because caseinate is a milk protein
  2. Safe, because 'non-dairy' guarantees the absence of all milk constituents
  3. Safe, provided it is lactose-free
  4. Safe if used only in black coffee
Answer and working

A. Unsafe, because caseinate is a milk protein

Caseinate is derived from milk and allergenic; milk must be declared as an allergen.

3. A plant drink with 120 mg calcium per 100 mL wishes to claim 'source of calcium' under Codex. It meets the liquid threshold because it provides:

  1. 1.2% of the NRV, which is exactly the minimum for liquids
  2. 120% of the NRV
  3. Nothing; plant drinks cannot make claims
  4. 12% of the NRV per 100 mL, above the 7.5% needed
Answer and working

D. 12% of the NRV per 100 mL, above the 7.5% needed

120/1,000 = 12% per 100 mL; the Codex 'source' level for liquids is 7.5% NRV per 100 mL.
