From the chemistry of a starch granule to the plant that cans, dries and packs it: one food science and technology degree, studied the way GATE, ICAR, food safety officer and industry exams test it worldwide.
This track covers food science and technology as one degree: food chemistry, microbiology, analysis and nutrition; food process engineering; commodity processing; packaging, safety, quality and food law; and product development, with PG and research subjects on top. Its curriculum and exam map are built from the published syllabi of GATE XE-G and XL-U Food Technology, ICAR AIEEA-PG Code 18 and ICAR AICE-JRF/SRF 35.a, 35.b and 41, each exam row carrying its source and a note on how firmly it was verified; many non-Indian rows are unverified. Where Laisha already teaches a subject in another track (food and dairy engineering, post-harvest engineering and plant design in Agricultural Engineering; milk products, meat science and food hygiene in Veterinary; food business in Agribusiness) this track refers to it and goes deeper rather than repeating it. Laisha's questions are original practice written to these syllabi; they are not past papers.
Years 1–2. The mathematics, statistics, chemistry, biochemistry, microbiology and nutrition that every food science subject leans on, and a first map of why food spoils and how it is preserved. Engineering drawing, workshop and basic electrical engineering are taught in many food technology degrees; Laisha keeps them in the Agricultural Engineering track (engineering-drawing-cad, workshop-technology, basic-electrical-electronics) rather than repeating them here.
Years 2–3. The chemistry, enzymology, microbiology, analysis, physics and sensory science of food itself, and the toxicology that defines what is safe to eat. This block is GATE XE-G Sections 1 and 2 and ICAR AIEEA-PG Code 18 Units I and IV.
Years 2–4. Transport phenomena and the unit operations of a food plant, from size reduction to sterilisation, freezing, drying and the newer non-thermal processes, plus plant design and sanitation. GATE XE-G Section 4 and ICAR AIEEA-PG Code 18 Unit II. Agricultural Engineering's food-dairy-engineering, heat-mass-transfer and refrigeration-cold-chain give a one-subject survey; these subjects take each operation further, with quality and safety outcomes alongside the engineering.
Years 3–4. The technology of each food commodity, from grain to beverage to meat and fish. GATE XE-G Section 3, ICAR AIEEA-PG Code 18 Unit III and ICAR AICE 35.a Units 2–3. Post-harvest handling machinery is in Agricultural Engineering (post-harvest-cereals-pulses-oilseeds, post-harvest-horticultural-crops); slaughter and carcass work are in Veterinary (meat-science-abattoir); milk processing in depth is in Veterinary (milk-products-technology) and the Dairy Technology track. These subjects concentrate on product chemistry, formulation and processed products.
Years 3–4 and the working life. Packaging and shelf life, food safety management systems, quality assurance and laboratory accreditation, food law worldwide, inspection and enforcement, food fraud and risk analysis. This block carries most of a food safety officer's or food analyst's syllabus and most industry certifications. Agricultural Engineering's food-quality-safety-plant-design gives an overview of HACCP, GMP and food law; Agribusiness's quality-management-standards covers quality management from the business side; these subjects go to the depth a food safety or regulatory professional needs.
Years 4 and beyond. Ingredients and additives, new product development, functional foods, alternative proteins, sustainability and the business of a food plant, plus the in-plant training and project that most degrees require. Agribusiness's food-processing-management and production-operations-management cover the management side for business graduates; this block keeps to what a technologist decides.
Master's and PhD. Research methods, advanced analytical science, food structure and delivery systems, and process modelling. ICAR AICE-JRF/SRF 35.a, 35.b and 41 test PG-level depth across the earlier phases; these subjects add what a thesis and a research career need.
Every row names the page or document it was taken from. 'verified' means the official page or document was opened and read for this track; 'unverified' means only the body's existence or home page was confirmed and the format given is Laisha's understanding, not a reading of the current notification. Web search was exhausted when this file was built, so most non-Indian rows are unverified; they are listed so that students know where to look, not as a statement of current format. Formats, dates and fees change: check the official source before you register. Countries with no written food-technology licensing exam (most of Europe, Australia, Canada and the USA) are represented by their professional bodies and industry certifications rather than by an invented exam.

A food technologist's work changes shape over a career: from passing semesters and GATE, ICAR or licensure exams, to running a production line, a quality laboratory or a district's food inspections, to heading plants, R&D centres and regulatory functions, to setting research agendas, standards and exams. This guide describes each stage as product analysis — what the work usually involves and where it hurts — not as a claim about any particular employer. No salaries or market sizes are given because none were verified. Where Laisha can help today it says so; anything not built yet is marked 'coming'.
An undergraduate in a four-year food technology, food science or food engineering degree — a B.Tech Food Technology in an Indian agricultural or technical university, a B.Sc. Food Science, an IFT-approved BS Food Science in the USA, a BSc (Hons) in the UK, a BS Food Technology in the Philippines, an Engenharia de Alimentos in Brazil — and the graduate preparing for GATE XE-G or XL-U, ICAR AIEEA-PG Code 18, a licensure exam or a first job.
