What this subject covers

The structure and chemistry of cereal grains and millets and how they are milled into flour, semolina, rice and maize products, with the flour quality tests that decide what each flour can make.

In the exams: GATE XE-G Section 3 (milling of rice, wheat and maize; parboiling; waste utilisation from rice milling); ICAR AICE 35.a Unit 2 (food grain processing)

What GATE asks from it

GATE — Engineering Sciences (XE), Section G Food Technology

Section 3 names milling of rice, wheat and maize, parboiling and waste utilisation from rice milling. Expect MCQs and NATs on kernel structure, extraction rate, tempering water, head rice yield, parboiling effects, wet milling products, rice bran stabilisation and husk utilisation.

GATE — Life Sciences (XL), Section U Food Technology

Same Section 3 content as XE-G, with more emphasis on grain chemistry: gluten proteins, amylose and rice quality, β-glucan, starch modification.

Choose an answer, then open the working. Each explanation says why the right answer is right and why the others are not.

1 · Wheat milling: conditioning, break, reduction and flour streams · medium

In a wheat flour mill, the break system uses:

  1. Smooth rolls running at equal speeds
  2. Hammer mills with fine screens
  3. Corrugated rolls at differential speed
  4. Stone discs rotating in opposite directions
Answer and working

C. Corrugated rolls at differential speed

Fluted rolls at differential speed open the kernel and scrape endosperm; reduction uses smooth rolls.

2 · Flour quality: protein, gluten, falling number and ash · easy

The nitrogen-to-protein conversion factor conventionally used for wheat flour is:

  1. 5.7
  2. 6.38
  3. 5.3
  4. 6.25
Answer and working

A. 5.7

5.7 for wheat; 6.25 is the general factor; 6.38 is used for milk.

3 · Rice milling and parboiling: quality and by-products · easy

Head rice is defined as milled rice kernels that are at least:

  1. Three-quarters of full length
  2. One-quarter of full length
  3. Equal to full length
  4. Half of full length
Answer and working

A. Three-quarters of full length

Kernels ≥ 3/4 length are head rice; shorter ones are brokens.

4 · Rice milling and parboiling: quality and by-products · hard

1,000 kg of paddy gives 700 kg of milled rice, of which 560 kg is head rice. What is the head rice yield as a percentage of paddy?

  1. 80%
  2. 70%
  3. 14%
  4. 56%
Answer and working

D. 56%

560/1,000 = 56% of paddy; 80% is head rice as a share of milled rice.

5 · Rice milling and parboiling: quality and by-products · medium

Why is parboiled rice nutritionally better than raw milled rice?

  1. Parboiling adds synthetic vitamins to the grain
  2. Thiamine and minerals migrate into the endosperm before milling
  3. The bran is retained completely after milling
  4. Parboiling destroys all phytate in the grain
Answer and working

B. Thiamine and minerals migrate into the endosperm before milling

Water-soluble nutrients move inward during soaking and steaming.

6 · Millet processing and products · easy

Which millet is notably rich in calcium?

  1. Proso millet
  2. Pearl millet (bajra)
  3. Sorghum (jowar)
  4. Finger millet (ragi)
Answer and working

D. Finger millet (ragi)

Finger millet has about 300–350 mg calcium per 100 g.

7 · Rice bran stabilisation and by-product utilisation · medium

Rice bran oil is valued for its content of:

  1. γ-Oryzanol and tocotrienols
  2. Erucic acid and gossypol
  3. Lauric acid and myristic acid
  4. Omega-3 EPA and DHA
Answer and working

A. γ-Oryzanol and tocotrienols

Oryzanol and tocotrienols are characteristic; erucic acid is in rapeseed.

8 · Rice bran stabilisation and by-product utilisation · medium

Rice bran with germ makes up about what share of paddy?

  1. 20–25%
  2. 8–10%
  3. 1–2%
  4. 35–40%
Answer and working

B. 8–10%

Husk is about 20%; bran with germ about 8–10%.

9 · Starch modification: physical, chemical and enzymatic · easy

Pregelatinised starch is useful in instant foods because it:

  1. Needs boiling to thicken
  2. Contains no amylopectin
  3. Swells in cold water
  4. Is cross-linked with phosphate
Answer and working

C. Swells in cold water

It has been cooked and dried, so it thickens without heating.

10 · Breakfast cereals and instant cereal products · medium

In gun puffing, grain expands because:

  1. Sudden pressure release flashes water to steam
  2. Hot oil penetrates and expands the starch
  3. Air is pumped into the grain under vacuum
  4. Carbon dioxide from yeast fermentation inflates it
Answer and working

A. Sudden pressure release flashes water to steam

Steam pressure builds in a sealed chamber and is released instantly.
