What this subject covers

From oilseed to finished fat: mechanical expression and solvent extraction, refining, bleaching and deodorisation, fat modification by hydrogenation, interesterification and fractionation, and the fat products — margarine, shortening, vanaspati and specialty fats — made from them.

In the exams: GATE XE-G Section 3 (oil processing: expelling, solvent extraction, refining, hydrogenation); ICAR AICE 35.a Unit 2 (oilseed processing, vanaspati)

What GATE asks from it

GATE — Engineering Sciences (XE), Section G Food Technology

Section 3 names oil processing: expelling, solvent extraction, refining and hydrogenation. Expect MCQs on refining steps and their purposes, hydrogenation and trans formation, and NATs on oil recovery from mass balance, NaOH for neutralisation, FFA from acid value and mean molecular weight from saponification value.

GATE — Life Sciences (XL), Section U Food Technology

Same Section 3 content, with chemistry of fats: iodine and saponification values, polymorphism, interesterification and oxidation.

1 · Mechanical expression and expellers · hard

The pungency of kachi ghani mustard oil comes from:

  1. Free fatty acids from lipase
  2. Allyl isothiocyanate
  3. Erucic acid released on pressing
  4. Sesamol formed by roasting
Answer and working

B. Allyl isothiocyanate

Glucosinolates are hydrolysed by myrosinase.

2 · Neutralisation, bleaching and deodorisation; physical refining · easy

In alkali refining, free fatty acids are removed as:

  1. Lecithin
  2. Soapstock
  3. Stearin
  4. Distillate
Answer and working

B. Soapstock

Sodium hydroxide converts them to soaps.

3 · Hydrogenation and trans fatty acids · easy

The catalyst most used for edible oil hydrogenation is:

  1. Platinum
  2. Lipase
  3. Sodium methoxide
  4. Nickel
Answer and working

D. Nickel

Sodium methoxide is for interesterification.

4 · Margarine, shortening and vanaspati · easy

Under the Codex fat spreads standard, margarine contains at least:

  1. 95% fat
  2. 60% fat
  3. 40% fat
  4. 80% fat
Answer and working

D. 80% fat

Reduced-fat spreads contain less.

5 · Oil quality tests: acid value, peroxide value, iodine value and saponification value · medium

An oil has an acid value of 2.0. What is its FFA content as oleic acid?

  1. 4.0%
  2. 2.0%
  3. 1.0%
  4. 0.5%
Answer and working

C. 1.0%

FFA = acid value / 1.99 = 2.0/1.99 = 1.0%.

6 · Oil quality tests: acid value, peroxide value, iodine value and saponification value · hard

An oil has a saponification value of 190. What is its approximate mean triacylglycerol molecular weight?

  1. 190
  2. 886
  3. 1,770
  4. 295
Answer and working

B. 886

3 × 56,100/190 = 886. 295 omits the factor of 3.

7 · Frying oil deterioration and management · easy

FSSAI requires frying oil to be discarded when total polar compounds exceed:

  1. 10%
  2. 25%
  3. 5%
  4. 50%
Answer and working

B. 25%

Many countries use about 24–27%.

8 · By-products of oil refining · easy

Acid oil is produced by acidulating:

  1. Deodoriser distillate
  2. Lecithin
  3. Soapstock
  4. Spent catalyst
Answer and working

C. Soapstock

Sulphuric acid splits the soaps.
