1 · Residues and maximum residue limits · medium

The most sensitive toxicological study of a veterinary drug gives a NOAEL of 5 mg/kg body weight per day. Using an uncertainty factor of 100, what is the ADI and the corresponding daily amount for a 60 kg adult?

  1. 50 µg/kg bw per day; 3 mg per day
  2. 500 µg/kg bw per day; 30 mg per day
  3. 50 µg/kg bw per day; 0.05 mg per day
  4. 500 mg/kg bw per day; 30,000 mg per day
Answer and working

A. 50 µg/kg bw per day; 3 mg per day

ADI = NOAEL / 100 = 0.05 mg/kg = 50 µg/kg bw per day; for 60 kg, 0.05 x 60 = 3 mg per day. Using a factor of 10 (500 µg/kg; 30 mg) omits one of the two tenfold factors (interspecies and intraspecies); forgetting to multiply by body weight gives 0.05 mg; multiplying by 100 (500 mg/kg) inverts the logic.

2 · Residues and maximum residue limits · hard

Using a model daily diet of 300 g muscle, 100 g liver, 50 g kidney, 50 g fat and 1.5 kg milk, residues are 50, 200, 400, 100 and 20 µg/kg in those foods. The ADI is 2 µg/kg bw per day for a 60 kg person. What share of the ADI does the diet supply?

  1. 642%
  2. 45%
  3. 75%
  4. 50%
Answer and working

C. 75%

Intake = 0.3x50 + 0.1x200 + 0.05x400 + 0.05x100 + 1.5x20 = 15 + 20 + 20 + 5 + 30 = 90 µg. Limit = 2 x 60 = 120 µg. 90/120 = 75%. Adding the concentrations without weighting by intake gives 642%; leaving out milk gives 50%; dividing by the ADI without body weight gives 45.

3 · Milk hygiene · medium

Why are wet teats undesirable when the milking cluster is attached?

  1. Water dilutes the milk and lowers its fat and solids-not-fat content below standard
  2. Dirty water runs down into the liners and carries bacteria and spores into the milk
  3. Water activates the lactoperoxidase system
  4. Water blocks the release of oxytocin
Answer and working

B. Dirty water runs down into the liners and carries bacteria and spores into the milk

Drying teats with an individual towel stops contaminated water, rich in coliforms and spores, from entering the milk and the teat end. The dilution effect is negligible; water has no effect on oxytocin.

4 · Milk-borne zoonoses · medium

In an HTST pasteuriser, what happens when the milk temperature at the end of the holding tube falls below the set point?

  1. The flow diversion valve sends the milk back to the raw side
  2. The regenerator pressure is reversed
  3. The holding tube is lengthened automatically to extend the holding time
  4. The milk is passed but recorded
Answer and working

A. The flow diversion valve sends the milk back to the raw side

The flow diversion valve is the automatic safeguard that returns under-heated milk for re-pasteurisation. Pressure in the regenerator must always be higher on the pasteurised side, never reversed.

5 · Ante-mortem inspection · easy

A bullock is found dead in the lairage with dark unclotted blood oozing from the nostrils and anus. What should be done?

  1. Do not open the carcass; notify and arrange safe disposal as suspected anthrax
  2. Open the carcass to confirm the diagnosis
  3. Slaughter and dress it separately at the end of the day, then send blood for testing
  4. Send it for normal post-mortem inspection
Answer and working

A. Do not open the carcass; notify and arrange safe disposal as suspected anthrax

Opening an anthrax carcass exposes Bacillus anthracis to air so it forms resistant spores. Diagnosis is by a blood smear from a peripheral vessel under precautions; animals dead in lairage are unfit anyway.

6 · Post-mortem inspection and judgement of carcasses · medium

A carcass from a pig with multiple abscesses in the lungs, liver, kidneys and carcass lymph nodes should be:

  1. Passed after trimming the abscesses
  2. Passed after heat treatment
  3. Passed if the abscesses are encapsulated
  4. Totally condemned as pyaemia
Answer and working

D. Totally condemned as pyaemia

Multiple abscesses in several organs and carcass nodes mean blood-borne spread (pyaemia), a generalised condition. Trimming is only for a single localised abscess.

7 · Food-borne infections · medium

Why is Taenia solium more dangerous to people than Taenia saginata?

  1. T. solium adult worms are much larger
  2. T. solium is transmitted by mosquitoes
  3. People who swallow T. solium eggs develop cysticercosis, including neurocysticercosis
  4. T. solium cysts cannot be killed by cooking or freezing, so all infected pork remains a risk
Answer and working

C. People who swallow T. solium eggs develop cysticercosis, including neurocysticercosis

Humans can act as intermediate hosts of T. solium, and cysts in the brain cause epilepsy. Cooking does kill cysticerci in pork.

8 · HACCP · medium

Why must good hygiene practices (prerequisite programmes) be in place before HACCP is applied?

  1. HACCP replaces them once implemented
  2. Without them HACCP tries to control at a few points what must be controlled everywhere
  3. They are only needed for export plants
  4. They are the same thing as critical control points, simply described under a different name
Answer and working

B. Without them HACCP tries to control at a few points what must be controlled everywhere

Prerequisites such as cleaning, pest control and personal hygiene control general hazards; HACCP focuses on significant hazards at specific steps. It never replaces them.

9 · Food safety standards and legislation: Codex and national regulators · medium

Which WTO agreement names Codex as the reference for food safety standards?

  1. The Agreement on the Application of Sanitary and Phytosanitary Measures
  2. The Agreement on Technical Barriers to Trade, which covers all food standards
  3. The Agreement on Agriculture
  4. The TRIPS Agreement
Answer and working

A. The Agreement on the Application of Sanitary and Phytosanitary Measures

The SPS Agreement names Codex for food safety, WOAH for animal health and IPPC for plant health. TBT covers other technical regulations such as labelling beyond safety.

10 · Post-mortem inspection and judgement of carcasses · medium

During cattle dressing, why are the oesophagus tied and the rectum bagged before evisceration?

  1. To make the carcass heavier
  2. To help bleeding
  3. To prevent rumen and faecal contents leaking onto the carcass
  4. To make post-mortem inspection of the lungs and heart quicker and easier
Answer and working

C. To prevent rumen and faecal contents leaking onto the carcass

Rodding the weasand and bunging prevent gut contents contaminating the carcass, the main source of STEC and Salmonella on beef.
