1 · Milk-borne zoonoses · medium

In an HTST pasteuriser, what happens when the milk temperature at the end of the holding tube falls below the set point?

  1. The flow diversion valve sends the milk back to the raw side
  2. The regenerator pressure is reversed
  3. The holding tube is lengthened automatically to extend the holding time
  4. The milk is passed but recorded
Answer and working

A. The flow diversion valve sends the milk back to the raw side

The flow diversion valve is the automatic safeguard that returns under-heated milk for re-pasteurisation. Pressure in the regenerator must always be higher on the pasteurised side, never reversed.

2 · Milk-borne zoonoses · easy

The milk ring test is used to screen herds for:

  1. Tuberculosis
  2. Subclinical mastitis
  3. Aflatoxin M1
  4. Brucellosis
Answer and working

D. Brucellosis

Stained Brucella antigen binds antibodies in milk that attach to the cream and form a coloured ring. TB uses the tuberculin test; mastitis uses SCC or CMT.

3 · Ante-mortem inspection · easy

A bullock is found dead in the lairage with dark unclotted blood oozing from the nostrils and anus. What should be done?

  1. Do not open the carcass; notify and arrange safe disposal as suspected anthrax
  2. Open the carcass to confirm the diagnosis
  3. Slaughter and dress it separately at the end of the day, then send blood for testing
  4. Send it for normal post-mortem inspection
Answer and working

A. Do not open the carcass; notify and arrange safe disposal as suspected anthrax

Opening an anthrax carcass exposes Bacillus anthracis to air so it forms resistant spores. Diagnosis is by a blood smear from a peripheral vessel under precautions; animals dead in lairage are unfit anyway.

4 · Food-borne infections · easy

Which parasite is acquired by eating raw or undercooked beef?

  1. Taenia solium
  2. Taenia saginata
  3. Echinococcus granulosus
  4. Fasciola hepatica
Answer and working

B. Taenia saginata

Cysticerci in beef give the beef tapeworm Taenia saginata. T. solium is from pork; Echinococcus comes from dog-passed eggs; Fasciola mainly from aquatic plants.

5 · Food safety standards and legislation: Codex and national regulators · easy

The Codex Alimentarius Commission was established by:

  1. WTO and WOAH
  2. UNICEF and WHO
  3. FAO and WHO
  4. FAO and the World Bank
Answer and working

C. FAO and WHO

FAO and WHO created Codex in 1963. WTO later referenced Codex in the SPS Agreement, and WOAH sets animal health standards.

6 · Food safety standards and legislation: Codex and national regulators · medium

Which WTO agreement names Codex as the reference for food safety standards?

  1. The Agreement on the Application of Sanitary and Phytosanitary Measures
  2. The Agreement on Technical Barriers to Trade, which covers all food standards
  3. The Agreement on Agriculture
  4. The TRIPS Agreement
Answer and working

A. The Agreement on the Application of Sanitary and Phytosanitary Measures

The SPS Agreement names Codex for food safety, WOAH for animal health and IPPC for plant health. TBT covers other technical regulations such as labelling beyond safety.

7 · Milk-borne zoonoses · medium

Which process gives a commercially sterile milk that can be stored at room temperature?

  1. HTST pasteurisation at about 72 °C for 15 s with refrigerated storage and a long shelf life
  2. Thermisation
  3. UHT treatment at about 135 °C or more for a few seconds with aseptic packaging
  4. LTLT pasteurisation
Answer and working

C. UHT treatment at about 135 °C or more for a few seconds with aseptic packaging

UHT with aseptic packaging destroys spores to commercial sterility. Pasteurised milk still contains spores and needs refrigeration; thermisation is milder still.

8 · Food-borne intoxications · easy

Which mould produces aflatoxins?

  1. Penicillium roqueforti
  2. Aspergillus flavus
  3. Fusarium graminearum
  4. Claviceps purpurea (ergot)
Answer and working

B. Aspergillus flavus

Aspergillus flavus and A. parasiticus produce aflatoxins. Fusarium makes deoxynivalenol and zearalenone; Claviceps causes ergotism.
