1 · World milk production by region and species: cow, buffalo, goat, sheep, camel, yak · easy

Which species produces the largest share of the world's milk?

  1. Cattle, at about four-fifths of world output
  2. Sheep, because of the large Mediterranean cheese industry
  3. Water buffalo, at roughly half of world output
  4. Goats, because they are kept in more countries than any other dairy species
Answer and working

A. Cattle, at about four-fifths of world output

FAO statistics put cattle at roughly four-fifths of world milk. Buffalo come second with around a seventh, concentrated in South Asia; goats and sheep each give only a few per cent despite being widespread.

2 · World milk production by region and species: cow, buffalo, goat, sheep, camel, yak · easy

Which organisation publishes the most widely used global statistics on milk production by country and species?

  1. The Food and Agriculture Organization of the United Nations
  2. The World Trade Organization's agriculture committee
  3. The International Organization for Standardization's food committee
  4. The World Organisation for Animal Health, through its animal census
Answer and working

A. The Food and Agriculture Organization of the United Nations

FAO's FAOSTAT database is the standard source for production by country and species. WOAH handles animal health, ISO handles methods, and WTO handles trade rules.

3 · Smallholder, pasture-based and confinement dairy systems · easy

What is a total mixed ration?

  1. A mineral lick placed in the field for grazing animals to use
  2. A blended feed of forages and concentrates fed together to housed cows
  3. Grass grazed in rotation across several paddocks over the season
  4. Crop residues such as straw and stover collected by smallholders after the harvest
Answer and working

B. A blended feed of forages and concentrates fed together to housed cows

A total mixed ration blends silage, hay and concentrates so each bite is balanced; it is typical of confinement systems. Rotational grazing and residue feeding belong to pasture and smallholder systems.

4 · Dairy cooperatives: models from Europe, Oceania, the Americas, Africa and Asia · easy

What are the three tiers of the Anand pattern of dairy cooperatives, from the bottom?

  1. Village society, district milk union, state federation
  2. Farm group, state federation, district milk union
  3. Private collector, village society, state federation
  4. District union, village society, national federation
Answer and working

A. Village society, district milk union, state federation

Village dairy cooperative societies own the district milk union, and the unions own the state marketing federation; farmers own the whole chain.

5 · Dairy cooperatives: models from Europe, Oceania, the Americas, Africa and Asia · easy

In which year was New Zealand's dominant dairy cooperative formed by merging the two largest cooperatives with the national dairy board?

  1. 1882
  2. 1970
  3. 1946
  4. 2001
Answer and working

D. 2001

It was formed in 2001 from the two largest New Zealand cooperatives and the New Zealand Dairy Board. 1882 is when Danish cooperative creameries began, 1946 when the Anand union in western India was registered, and 1970 when Operation Flood started.

6 · Milk collection: village collection centres, bulk milk coolers and farm tanks · easy

What three components make up an automatic milk collection unit at a village centre?

  1. A cooling coil, a pump and a filling machine
  2. A cream separator centrifuge, a homogeniser and a small pasteuriser
  3. A lactometer, a thermometer and a hand ledger
  4. An electronic scale, a milk analyser and a data processor
Answer and working

D. An electronic scale, a milk analyser and a data processor

The scale weighs, the analyser measures fat, SNF and added water, and the data processor prices the lot and prints a receipt.

7 · Clean milk production on the farm · easy

Why are the first few squirts of milk from each teat stripped before milking?

  1. To raise the fat content of the milk sent to the bulk tank
  2. To cool the teat so that milk let-down is slowed
  3. To detect mastitis and discard the milk with the highest bacterial load
  4. To provide the calf with its first colostrum feed before the milker starts work
Answer and working

C. To detect mastitis and discard the milk with the highest bacterial load

Fore-stripping reveals clots or abnormal milk from mastitis and removes teat-canal milk with most bacteria; it also helps stimulate let-down.

8 · Raw milk transport and chilling · easy

What is the main purpose of a milk chilling centre in a can-collection milk shed?

  1. To separate cream and make butter at village level
  2. To pasteurise and pack milk for direct sale to consumers
  3. To store milk at room temperature in cans until the processing plant needs it
  4. To cool warm can milk quickly before sending it to the processing plant
Answer and working

D. To cool warm can milk quickly before sending it to the processing plant

Chilling centres receive warm can milk, cool it in plate chillers to about 4 °C and dispatch it in insulated tankers.

9 · International dairy trade: commodities, prices and the Global Dairy Trade auction · easy

Roughly what share of the world's milk is traded internationally, in milk-equivalent terms?

  1. About a third
  2. About a half
  3. Under a tenth
  4. Almost all
Answer and working

C. Under a tenth

Only a small fraction, commonly estimated at under 10%, crosses borders, mostly as powders, fats and cheese.

10 · International bodies: IDF, Codex Alimentarius, FAO, ISO TC 34/SC 5 · easy

Which two UN agencies created the Codex Alimentarius Commission?

  1. FAO and WHO
  2. UNDP and ILO
  3. WTO and UNICEF
  4. WOAH and UNEP
Answer and working
