Additives numbered in the 200s in the INS/E system are mainly:

  1. Emulsifiers and thickeners
  2. Sweeteners
  3. Colours
  4. Preservatives
Answer and working

D. Preservatives

100s colours, 200s preservatives, 400s thickeners and emulsifiers.

2 · Preservatives: benzoates, sorbates, sulphites, nitrites and natural antimicrobials · medium

Nitrite is added to cured meats mainly to:

  1. Add sweetness to the meat
  2. Lower the pH of the meat
  3. Increase water-holding capacity
  4. Control C. botulinum and fix colour
Answer and working

D. Control C. botulinum and fix colour

It forms nitrosomyoglobin.

3 · Preservatives: benzoates, sorbates, sulphites, nitrites and natural antimicrobials · medium

Ascorbate or erythorbate is added with nitrite in cured meats to:

  1. Lower the salt content
  2. Reduce nitrosamine formation
  3. Increase nitrite toxicity
  4. Replace nitrite completely
Answer and working

B. Reduce nitrosamine formation

It also speeds colour formation.

4 · Antioxidants: synthetic and natural · medium

Citric acid improves the action of phenolic antioxidants mainly by:

  1. Chelating pro-oxidant metal ions
  2. Absorbing oxygen from the headspace
  3. Lowering the oil's melting point
  4. Donating hydrogen atoms to radicals
Answer and working

A. Chelating pro-oxidant metal ions

It is a synergist rather than a primary antioxidant.
