What this subject covers

The newer ways to make food safe or change its structure with less heat damage: high-pressure processing, pulsed electric fields, ohmic, microwave and radio-frequency heating, irradiation, UV, cold plasma and ultrasound — their mechanisms, equipment, validation and regulatory status.

In the exams: GATE XE-G Section 3 (irradiation, hurdle technology); ICAR AICE 35.a Unit 1 (non-thermal and alternate-thermal technologies); ICAR AIEEA-PG Code 18 Unit III (irradiation, microwave processing)

What ICAR AICE-JRF/SRF asks from it

ICAR AICE-JRF/SRF (PhD) — Food Processing Technology, Food Safety & Quality, Processing and Food Engineering

35.a Unit 1 names non-thermal technologies (microfiltration, bactofugation, high-voltage and pulsed electric fields, high-pressure processing, irradiation, thermosonication), alternate-thermal technologies (ohmic, dielectric, infrared and induction heating) and biological technologies (antibacterial enzymes, bacteriocins); 37 Unit 3 names radiation, microwave, ohmic, high-pressure, PEF, infrared and ultrasonic processing of dairy foods. Expect mechanism, equipment, application and limitation questions, plus calculations of dose, heating rate and log reduction.

10 practice questions, worked

Choose an answer, then open the working. Each explanation says why the right answer is right and why the others are not.

1 · High-pressure processing: principles, equipment and microbial inactivation · medium

The isostatic principle in HPP means that

  1. pressure is highest at the package surface
  2. pressure takes hours to reach the centre
  3. large products need longer holding than small ones
  4. pressure is uniform throughout the product
Answer and working

D. pressure is uniform throughout the product

Pressure is transmitted instantly and evenly, unlike heat, so there is no cold spot.

2 · Pulsed electric fields · medium

PEF pre-treatment of potatoes for French fries is done mainly to

  1. sterilise the potatoes for long ambient storage before frying
  2. soften tissue for easier cutting and less oil uptake
  3. add colour to the fries
  4. increase the sugar content
Answer and working

B. soften tissue for easier cutting and less oil uptake

Low-field permeabilisation softens tubers, gives cleaner cuts and lowers oil uptake.

3 · Microwave and radio-frequency heating · medium

Radio-frequency heating is preferred over 2,450 MHz microwaves for tempering large frozen blocks because RF

  1. penetrates deeper
  2. heats only the surface
  3. needs no electricity
  4. works only on liquids
Answer and working

A. penetrates deeper

Longer wavelengths of RF give deeper, more uniform heating of large blocks.

4 · Microwave and radio-frequency heating · hard

Microwave-assisted thermal sterilisation (MATS) heats packaged foods

  1. in dry air at 2,450 MHz
  2. in a vacuum chamber without any water present
  3. with gamma rays
  4. immersed in pressurised water at 915 MHz
Answer and working

D. immersed in pressurised water at 915 MHz

Immersion smooths heating and allows sterilising temperatures; 915 MHz penetrates deeper.

5 · Ultraviolet light and pulsed light · medium

Photoreactivation after UV treatment refers to

  1. the formation of vitamin D in the treated surface
  2. activation of ozone
  3. light-driven repair of UV-damaged DNA
  4. heating of the lamp
Answer and working

C. light-driven repair of UV-damaged DNA

Some microbes repair dimers using visible light, reducing net inactivation.

6 · Ultrasound in food processing · easy

Ultrasound is sound above about

  1. 20 Hz
  2. 20 kHz
  3. 2 Hz
  4. 200 Hz
Answer and working

B. 20 kHz

Human hearing extends to about 20 kHz.

7 · Ultrasound in food processing · hard

Manothermosonication combines ultrasound with

  1. heat and pressure
  2. UV light only
  3. ozone only
  4. freezing
Answer and working

A. heat and pressure

Pressure intensifies cavitation; heat adds lethality.

8 · Ozone and other chemical non-thermal treatments · medium

A produce washer switches from chlorine to ozone. The key worker-safety control is

  1. monitoring air ozone and destroying off-gas
  2. adding extra chlorine to the wash water at the same time
  3. heating the wash water to 80 °C
  4. stopping all ventilation
Answer and working

A. monitoring air ozone and destroying off-gas

Ozone is toxic at low concentrations; enclosure, monitoring and off-gas destruction are needed.

9 · Validation of novel processes and surrogate organisms · hard

In the Weibull model, a shape parameter p < 1 indicates

  1. shoulders before inactivation
  2. perfectly linear kinetics
  3. no inactivation
  4. tailing survivor curves
Answer and working

D. tailing survivor curves

p < 1 gives concave-up (tailing) curves; p > 1 gives shoulders.

10 · Regulatory approval of novel processes · hard

A company wants to sell shelf-stable low-acid meals made by microwave-assisted sterilisation in the USA. It must

  1. simply label them 'microwaved'
  2. register them as irradiated foods
  3. file the scheduled process with process-authority support
  4. obtain a novel food authorisation from the European Commission first
Answer and working

C. file the scheduled process with process-authority support

Low-acid canned food rules apply; MATS processes have been accepted on this basis.
