10 practice questions, worked

Choose an answer, then open the working. Each explanation says why the right answer is right and why the others are not.

1 · Centrifugal separators and clarifiers · hard

A separator bowl spins at 6,000 rpm. At a radius of 0.25 m, roughly how many times gravity (9.81 m/s²) is the centrifugal acceleration?

  1. About 10,061 g
  2. About 16.0 g
  3. About 917,431 g
  4. About 255 g
Answer and working

A. About 10,061 g

ω = 2π × 6000 ÷ 60 = 628.3 rad/s; rω² = 0.25 × 628.3² = 98,696 m/s² ≈ 10,061 g. The other figures forget 2π, use rpm instead of rad/s, or use ω instead of ω².

2 · Mixing and agitation equipment · medium

If agitator speed is doubled with the same impeller, by what factor does power rise (turbulent flow, P ∝ N³)?

  1. 2
  2. 32
  3. 4
  4. 8
Answer and working

D. 8

2³ = 8. 2 assumes linear; 4 squares; 32 uses the D⁵ exponent.

3 · Milk storage tanks and silos · medium

What is the purpose of a silo air vent with filter?

  1. Prevent vacuum or pressure damage
  2. To add carbon dioxide for preservation
  3. To cool the milk by blowing air
  4. To let cream escape from the top
Answer and working

A. Prevent vacuum or pressure damage

Blocked vents can collapse tanks, for example when hot CIP solution cools.

4 · Milk storage tanks and silos · hard

Why can an outdoor silo collapse after hot CIP if its vent is blocked?

  1. Cooling vapour creates a vacuum
  2. Hot solution expands the steel until it tears
  3. Caustic dissolves the inner shell
  4. Wind pressure acts on hot steel
Answer and working

A. Cooling vapour creates a vacuum

Contraction of hot vapour lowers internal pressure.

5 · UHT plants: direct steam injection and infusion; indirect systems · hard

Why are steam barriers fitted on valves in aseptic systems?

  1. To remove air from the product
  2. Keep shaft seals sterile
  3. To cool the valve body
  4. To heat the product further
Answer and working

B. Keep shaft seals sterile

Steam around seals blocks microbial ingress.

6 · Mixing and agitation equipment · medium

Static mixers blend streams by:

  1. Rotating blades driven by a motor
  2. Fixed elements dividing the flow
  3. Heating the stream
  4. Vibrating the pipe
Answer and working

B. Fixed elements dividing the flow

Fixed elements split and recombine the flow, so no moving parts are needed.

7 · Butter churns and continuous butter makers · medium

In continuous butter makers, butter grains form in:

  1. A vacuum pan
  2. A slowly rotating drum over hours
  3. A high-speed beater cylinder
  4. A spray chamber
Answer and working

C. A high-speed beater cylinder

Grains form within seconds.

8 · Butter churns and continuous butter makers · medium

The vacuum section of a continuous butter maker:

  1. Adds air for overrun like ice cream
  2. Heats the butter
  3. Separates buttermilk
  4. Removes air for a denser butter
Answer and working

D. Removes air for a denser butter

Air removal improves body and keeping quality.

9 · Cheese vats, curd makers and moulding systems · medium

Pasta filata curd is worked in:

  1. Pneumatic tunnel presses
  2. Brine tanks
  3. Pre-pressing columns
  4. Cooker-stretchers
Answer and working

D. Cooker-stretchers

Augers knead curd in hot water.

10 · Filling and packaging machines · medium

Why is the filling zone treated as a high-hygiene area?

  1. Fillers heat the product to sterilise it
  2. Product is exposed after its last heat treatment
  3. Fillers need no cleaning
  4. Packaging needs warm air
Answer and working

B. Product is exposed after its last heat treatment

Post-process contamination is the main risk.
