Choose an answer, then open the working. Each explanation says why the right answer is right and why the others are not.

1 · Barrier properties and permeability · medium

A pack has 0.05 m² of film with an OTR of 10 cm³/m²·day. If the product tolerates 10 cm³ of oxygen, roughly how many days does it last on oxygen grounds?

  1. 20 days
  2. 2 days
  3. 0.5 days
  4. 200 days
Answer and working

A. 20 days

Ingress = 0.05 × 10 = 0.5 cm³/day; 10 ÷ 0.5 = 20 days. 0.5 is the daily ingress; 2 and 200 slip by ten.

2 · Testing of packaging materials · medium

A paperboard sample of 0.01 m² weighs 2.5 g. What is its grammage?

  1. 250 g/m²
  2. 2.5 g/m²
  3. 25 g/m²
  4. 2,500 g/m²
Answer and working

A. 250 g/m²

2.5 ÷ 0.01 = 250 g/m². The others slip by factors of ten.

3 · Barrier properties and permeability · medium

A powder pouch has 0.08 m² of film with a WVTR of 0.5 g/m²·day. How much water vapour enters in 30 days at test conditions?

  1. 15 g
  2. 1.2 g
  3. 12 g
  4. 0.04 g
Answer and working

B. 1.2 g

0.08 × 0.5 × 30 = 1.2 g. 0.04 g is per day; 12 g slips a decimal; 15 g ignores the area.

4 · Materials: glass, metal, paper, plastics, laminates · medium

Polystyrene is used for yoghurt cups mainly because it:

  1. Is fully recyclable everywhere
  2. Withstands retorting
  3. Thermoforms easily
  4. Is the best oxygen barrier
Answer and working

C. Thermoforms easily

PS forms well but is brittle and seldom recycled.

5 · Testing of packaging materials · medium

Taint testing of packaging compares:

  1. Film thickness before and after printing it
  2. Product stored with and without the material
  3. Prices of competing suppliers
  4. Two different OTR instruments
Answer and working

B. Product stored with and without the material

Sensory panels detect transferred odours.

6 · Testing of packaging materials · medium

Vacuum decay and bubble emission tests detect:

  1. Migration of additives
  2. Ink adhesion
  3. Light transmission
  4. Pack leaks
Answer and working

D. Pack leaks

Integrity tests find holes and poor seals.

7 · Pouch, bottle and carton filling of milk · medium

Why is light protection critical for milk in clear bottles?

  1. Light makes the bottle brittle and cloudy
  2. Retail light causes off-flavour within hours
  3. Light breaks seals
  4. Light raises milk fat
Answer and working

B. Retail light causes off-flavour within hours

Riboflavin-sensitised oxidation acts quickly.

8 · Aseptic packaging and package sterilisation · medium

Aseptic packaging allows paperboard packs for UHT milk because:

  1. Paperboard is sterile when made
  2. The pack is not heated with the product
  3. Paperboard withstands retort temperatures
  4. UHT milk needs no package barrier
Answer and working

B. The pack is not heated with the product

Only product and pack are sterilised separately.

9 · Packaging of butter, cheese, powders, ice cream and fermented milks · medium

Freezer burn on ice cream results from:

  1. Moisture loss by sublimation
  2. Light exposure
  3. Excess sugar
  4. Bacterial growth on the surface
Answer and working

A. Moisture loss by sublimation

Packs must limit water vapour loss.

10 · Active and intelligent packaging · medium

An oxygen indicator in a MAP pack changes colour to show:

  1. Fat oxidation
  2. Expiry
  3. A leak
  4. Temperature abuse
Answer and working

C. A leak

Oxygen entering signals failed integrity.
