Choose an answer, then open the working. Each explanation says why the right answer is right and why the others are not.
Why do utility peaks in a dairy plant often coincide with cleaning periods?
D. Hot detergent and rinse water are drawn while other lines keep producing
CIP draws heated water and detergent and large rinse volumes, while other lines continue processing, so steam and water demand peak together. Production does not stop everywhere during cleaning, and hot cleaning raises steam demand.
Why must clear height be considered as carefully as floor area in a dairy processing hall?
B. Tall equipment, bowl removal and overhead pipe racks need vertical space
Silos, separators that need head room to lift the bowl, and pipe racks set the height, and powder plants need very tall buildings for driers. Higher ceilings usually increase the air volume to condition, and height rules vary by country.
A plant has condensation dripping from cold pipes above an open filler. Which design response addresses the cause?
D. Improve ventilation and insulate or reroute the cold pipes away from open product
Condensation forms when warm humid air meets cold surfaces; ventilation, insulation and routing cold pipes away from open product remove the source. Faster filling, more testing and drip trays do not stop drips falling onto product.
Why is hygienic zoning decided at the layout stage rather than after the building is designed?
C. It sets walls, air handling, drains and changing rooms, hard to alter later
Zones determine physical features of the building: partition walls, air handling with pressure cascades, drain routes and changing facilities. Retrofitting them in a finished building is expensive. Uniform colours follow zoning, they do not define it.
Compared with a cylinder of the same diameter and wall thickness, what is the membrane stress in a sphere under the same internal pressure?
D. Half the cylinder's hoop stress
A sphere's stress is PD/(4t) in all directions, half the cylinder's hoop stress PD/(2t). That is why hemispherical heads need about half the thickness of the shell.
Why are flat heads rarely used on vessels with significant internal pressure?
C. They bend under pressure and need very great thickness
A flat plate resists pressure by bending, so it needs much more thickness than a curved head, which resists pressure mainly by membrane tension. Flat heads are used for low pressures or small diameters and can be welded and permitted under codes.
What must a hygienic dairy pressure vessel's supports satisfy in addition to the pressure code?
B. Allow floor cleaning beneath and avoid crevices that trap soil
Legs and supports must leave space to clean the floor and must not create crevices or ledges, so hygienic design rules apply alongside the structural ones. Rusting supports and supports set into drains are unhygienic.
A pump moves 30 cubic metres per hour of a liquid of density 1,000 kg/m³ against a total head of 25 m with 65 percent efficiency. What shaft power is needed?
C. About 3.1 kW
Hydraulic power = ρgQH = 1,000 × 9.81 × (30/3,600) × 25 = 2.04 kW; shaft power = 2.04 ÷ 0.65 = 3.1 kW. 2.0 kW ignores efficiency; 4.8 kW divides twice; 1.3 kW multiplies by efficiency instead of dividing.
Why are services routed through service corridors or external pipe bridges where possible?
D. Maintenance staff can work on them without entering high-hygiene rooms
Keeping valves, unions and services outside high-hygiene rooms reduces traffic and contamination risk during maintenance. Pipe lengths and insulation needs are not reduced by this, and some pipes must enter production rooms.
Why are internal welds on dairy product pipelines inspected, for example with a borescope?
D. A poor internal weld leaves an uncleanable crevice
Lack of penetration or rough internal welds leave crevices where soil and bacteria lodge and CIP cannot reach. Inspection finds them before the line enters service.
